Macaroni in Béchamel sauce with mushroom and corn

Yes you read it right 🙂 It is pasta yet again. I feel it’s the easiest dish that you can prepare in a jiffy, and so i prepared it last Saturday for lunch. I was not well on Friday and was feeling low ,so to make my mood happy atleast the next day , i wanted to indulge in some creamy and saucy goodness 🙂 and to me it was Pasta in Béchamel Sauce 🙂

Béchamel sauce is also called the mother sauce as it is the base for many more sauces that are widely used in Italian cuisine.

Now off to the recipe 🙂 

Things you’ll need : (Serves 2-3 persons)

Macaroni/Pasta – 250 gms

Mushrooms – 250 gms

American corn – 1 cup

Black olives –  ¼ th Cup (sliced)

Onions – 1 no. (finely chopped)

Garlics – 3 cloves ( thinly sliced)

Oregano  & thyme ( i love these herbs) – you can use what yo u like( limit it to the italian herbs though !)   – 1 + 1teaspoon

Wheat flour – 1 tablespoon

Butter  – 2 tablespoons

Olive oil – 2 teaspoons

Pepper  Powder – 1 teaspoon

Milk – 2 cups

Onion – ½

Cloves –  5-6 nos.

Salt to taste

Procedure :

I would suggest you to make both the sauce and the veggies simultaneously, you can cook your pasta al-dente may be before doing ,both of these, that way your sauce doesn’t form a blanket on it when allowed to sit 🙂 also more importantly this saves loads of time 🙂

The sauce :

I had blanched the mushrooms in hot water with salt and turmeric powder and then chopped them.

Take a pan, add butter and flour and roast the flour until  the raw smell goes ,take care not to burn the flour.(else you ‘ll be left with a charred sauce :))

Clove – Onion

This is the most important step in making this sauce, cut an onion into half and pierce cloves on it,remember the cloves should have their buds on them,this clove-onion combo imparts the whole flavour to the sauce 🙂

I have used wheat flour to make this healthy, however, the original béchamel sauce calls for plain flour/maida. You can use either of them as per your wish. I wanted mine to be healthy so i went for wheat flour 🙂

Now pour in the milk and keep stirring the sauce , add salt, herbs and the clove- onion and cook the sauce until it thickens to the saucy consistency(i.e not too thick nor too thick).

When the sauce is ready, remove from the flame and add a dash of pepper powder and mix well.

The veggies :

Take another pan, add oil,garlic,onions and sauté well, till the onions turn translucent.

Now add, the chopped mushrooms, corn and pitted olives and sauté well for 10 minutes, check for salt add the herbs.

Now add the pasta to the veggies (look at the colors 🙂 ), pour in the sauce, mix well, add some extra virgin olive oil on it , this is optional, i personally love the flavour of extra virgin:)
